The Black Diamond
You are about to discover this precious mushroom call the Black Truffle of Tricastin. This is a tuber Melanosporum, called a black truffle of either the Perigord region or Tricastin. The southeast of France, particularly the Drome and the Vaucluse are the most productive truffle regions. Between Orange and Montelimar is called the region called the Tricastin, the leading truffle producing region in France. The truffle is a mushroom veiled in mystery. It is intriguing because of its’ underground life, its color, odor and taste.
Cooking with truffles
The truffle is easy to cook with, but the cooking must carefully enhance it. And one does not cook fresh and preserved truffles the same way. A preserved truffle must be quickly manipulated in order to capture its volatile perfume.
Producer, and preserver.
For 12 years we have only prepared and preserved our truffles after first cooking. This allows us to respect the mushroom. Additionally, the denomination Truffe de Tricastin guarantees you that these are authentic Black Truffles, Tuber Melanosporum.
